It’s sad to say but I think we are down to the last tomatoes in our garden. Oh how we are going to miss the ease of picking a good bowl full of ripe, plump, red juicy tomatoes (surely the fruit of the summer, and yes fruit not vegetable!) on a regular basis. Is this the sign that we are heading towards the latter stages of summer?
With the last picked from the shrivelled plants I thought I needed a celebratory dish, a dish that would make the tomato the hero. A simple dish that came to mind was simply adding basil, mozzarella and olive oil, to make the famous err…’tomato, basil and mozzarella salad’ now surely this is a recipe I can master.
Who knew that this salad had a name ‘Insalata Caprese’ ….so it was just me then.
So for those that need the recipe here it is.
- Slice the tomatoes
- Slice the Basil
- Slice the mozzarella
- Place decoratively on a plate
- Drizzle with Olive Oil
- Pour yourself a glass of wine (optional)
- Sit and eat in the sun (optional)
